A Honey Lavender Iced Latte is a delightful coffee drink that combines sweet and floral flavors. Nothing says summer like an iced coffee, and I love playing around with different flavors to keep it interesting, although my all-time favorite- my iced maple syrup latte– doesn’t get old. But I love the floral flavor in this one, it is so refreshing and feels extra fancy.
Why you will love this recipe:
- Caffeinating boost. Who doesn’t need those? I know I do. I have my coffee consumption down to one cup in the morning and then my life giving iced or hot latte between 11-2, and it is the highlight of my days.
- Sweet, floral and creamy. Honey and lavender are a delicious pairing, bursting with the flavors of spring and summer.
- Easy to make. If you’ve never made a latte at home, I can promise it’s much easier than you think. All you need is some finely ground espresso, high-quality honey, lavender, and your milk of choice.
- Cost effective. In fact, for the cost of about two splurgy coffee drinks from your local coffee shop, you can make enough honey lavender lattes to power you through several weeks. Plus, when you make lattes at home, you have all the options to choose organic beans, go caffeine-free, use alternative milk, and sweeten to your liking — all without any $0.50 upcharges along the way
What you need to make this delicious iced honey lavender latte:
- 1 cup honey
- 1 cup water
- 2 tbsp culinary lavender
- 2 shots of espresso (or strongly brewed coffee, cold brew coffee concentrate, or instant coffee).
- 1/4 cup whole milk (or milk of choice)
- heavy cream
Homemade Lavender Syrup:
- In a small saucepan, combine honey, dried culinary lavender, and 1 cup of water.
- Simmer over medium low heat until the honey dissolves.
- Let the syrup sit for 20-40 minutes to infuse the lavender flavor.
- Using a fine mesh strainer, Strain out the lavender flowers and store syrup in a small glass jar in the fridge.
How to make the iced lavender latte recipe:
- Pour approximately 2-3 tablespoons of the lavender honey syrup into a 12 oz. glass.
- Add 2 shots of espresso (or strongly brewed coffee, cold brew concentrate, or instant espresso).
- Stir to combine.
- Fill the glass with ice.
- Using a milk frother, froth 2 tbsp of heavy cream and 1/4 cup of milk together. Pour over ice.
- Serve immediately and enjoy!
Substitutions & Variations
While I love these iced honey lavender lattes just as they are, there are plenty of ways to customize them to your liking. Here are some of my favorite variations:
- Hot – If you’re not an iced coffee person, make a hot latte instead! Word to the wise: the ideal temperature for frothing whole or almond milk is between 140-155F.
- Dairy-Free – The world of alt-milks has endless options nowadays. Whether you use one of the various nut milks (e.g. almond, macadamia nut, or pistachio), flax milk, oat milk, or even the wilder sounding banana or potato (!!!) milk, the choice is all yours.
- Vegan – Choose a dairy-free milk alternative and swap the honey out for sugar, brown sugar, date syrup, or agave nectar.
What if I don’t have an espresso machine?
You could buy one and make your life richer 😁 JK. Here is a link for one I recommend, but I know it is a luxury item for a lot of people. If you don’t have an espresso machine to make a shot of espresso, here are some other ways to make a similar shot of condensed coffee:
- A French press: this is a device for brewing coffee in a small pitcher. It’s most often used for brewed coffee, but it works for espressos too. The flavor is pretty comparable to the real thing.
- Extra strong cup of coffee: Brew your coffee as you normally would, just double the amount of ground coffee beans.
- Cold brew: Combine 1½ cups of coarsely ground coffee with 3 cups of cold water in a mason jar. Stir until all coffee grounds are wet. Cover the container and let it steep on your kitchen counter for 12-14 hours. Strain the mixture to separate the concentrate from the grounds, store in fridge. One ounce of espresso is the rough equivalent to 3 ounces of cold brew.
- Instant coffee: While it won’t be exactly like a traditional espresso, you can still create a comparable experience using instant coffee. Choose a dark roasted instant coffee labeled as “strong” or “bold.” This will help replicate the intensity of espresso shots. For a single espresso shot, add two tablespoons of instant coffee to a cup. Boil water and add 1 oz (about 30 ml) for a single shot to the cup. Double that for this recipe.
