How to make honey lavender syrup
In a small saucepan, combine honey, dried culinary lavender, and 1 cup of water.
Simmer over medium low heat until the honey dissolves.
Let the syrup sit for 20-40 minutes to infuse the lavender flavor.
Using a fine mesh strainer, Strain out the lavender flowers and store syrup in a small glass jar in the fridge.
How to make the iced lavender latte recipe:
Pour approximately 2-3 tablespoons of the lavender honey syrup into a 12 oz. glass.
Add 2 shots of espresso (or strongly brewed coffee, cold brew concentrate, or instant espresso).
Stir to combine.
Fill the glass with ice.
Using a milk frother, froth 2 tablespoon of heavy cream and ¼ cup of milk together. Pour over ice.
Serve immediately and enjoy!

Substitutions & Variations
While I love these iced honey lavender lattes just as they are, there are plenty of ways to customize them to your liking. Here are some of my favorite variations
Hot - If you’re not an iced coffee person, make a hot latte instead! Word to the wise: the ideal temperature for frothing whole or almond milk is between 140-155F.
Dairy-Free - The world of alt-milks has endless options nowadays. Whether you use one of the various nut milks (e.g. almond, macadamia nut, or pistachio), flax milk, oat milk, or even the wilder sounding banana or potato (!!!) milk, the choice is all yours.
Vegan - Choose a dairy-free milk alternative and swap the honey out for sugar, brown sugar, date syrup, or agave nectar.
