This iced matcha latte with lavender syrup is smooth, refreshing, and lightly floral, combining earthy matcha with creamy milk and a subtle touch of lavender for a café-style drink you can easily make at home.

This matcha recipe with lavender syrup is one of my favorite drinks. Not just favorite as in I’ll-make-it-once-and-forget-about-it. Favorite as in I crave it, think about it, and feel slightly annoyed when I run out of lavender syrup. The lavender flavor makes it taste floral but not perfume floral. Earthy but not grassy in a way. Sweet but calm. Basically, the drink version of a deep breath.

For one iced matcha latte
- 1 teaspoon high-quality matcha powder
- 2 to 3 ounces hot water
- ¾ to 1 cup milk of choice
- 1 tablespoon lavender syrup (recipe included)
- 1 tablespoon honey
Optional add-ins
- Ube powder for color
- ¼ teaspoon vanilla extract
- Sweet cream cold foam for topping
How to Make an Iced Matcha Latte with Lavender Syrup
- Add 1 tsp matcha powder to a small bowl or cup.
- Add about 2 ounces hot (not boiling) water. Whisk until smooth.
- Add 1 tbsp honey and stir.
- Fill a glass with ice cubes.
- Pour matcha mixture over ice.
- Add 1-2 tablespoon of honey lavender syrup. Adjust to taste.
- Pour in milk until the glass is about three quarters full.
- Top with cold foam colored with ube powder if desired.
Lavender Simple Syrup
- 1 cup water
- 1 cup honey
- 3 to 4 tablespoons dried culinary lavender
Instructions:
- Add the water, honey, and dried lavender to a small saucepan.
- Bring to a gentle boil over medium heat, stirring occasionally.
- Reduce heat and simmer for 3 to 5 minutes until fragrant.
- Remove from heat and strain out lavender buds.

Milk Options That Work Well:

Is this drink caffeinated
Yes but gently. Matcha contains caffeine plus L theanine which means calmer energy and fewer jitters.
Can I make it ahead of time
You can prep the lavender syrup ahead. Matcha is best fresh. It does not like to sit around waiting.
Hot or iced only
This recipe is iced but it’s excellent hot too. Just use heated milk and no ice.
