My daughters get to share the Starbucks strawberry acai refresher if I ever go through the drive-thru to grab myself a coffee. Much to their delight, I learned how to make a copycat version at home, it's not exactly the same but to them it's a yummy pink drink and they love it.  

With a few simple steps you too can enjoy this delicious homemade version at home and skip the drive thru. It does require a few ingredients that we normally don't have around, but for the price of a large Starbucks pink drink, you can buy enough ingredients to make this refreshing drink 10 times. 

Making fun drinks like this is one of our favorite things to add to our school days. As a homeschool family, we love cold drinks as a mid-day pick me up. This healthy strawberry refresher recipe is especially a big deal to this all-girl family because of its vibrant pink color that comes from the hibiscus tea.

Ingredients:

  • 1 Tazo "Passion" tea bag
  • ½ cup white grape juice
  • ½ cup water
  • 1 tablespoon honey (or sweetener of choice)
  • ½ cup coconut milk (unsweetened)
  • freeze dried strawberries 
  • ice cubes

Instructions:

  1. Heat half a cup of water and steep the tea bag for 5 minutes. 
  2. Add honey to hot tea and mix. Let cool. 
  3. Fill a tall glass with ice.
  4. Pour pink tea over ice, and ½ cup of white grape juice. 
  5. Top with coconut milk and a handful of freeze-dried strawberries. 
  6. Stir to combine, add more sweetener if you like a sweeter drink.

No, this is the popular drink called "pink drink". The Starbucks version of the pink drink has a strawberry acai base, sugar, white grape juice concentrate, green coffee extract powder, natural flavors among other ingredients, including added sugar in their coconut milk. My easy copycat recipe uses healthier options while keeping the same refreshing flavors. Their refresher options are not creamy like this one. 

What makes this drink pink?

Hibiscus tea gets its beautiful pink to deep red color from the hibiscus flower petals used to make the tea. These petals are rich in natural pigments called anthocyanins, which are responsible for the vibrant color. When the petals are steeped in hot water, these pigments are released, giving the tea its distinctive hue. The longer the petals steep, the deeper the color becomes. This natural coloring also adds to the tea's tart and slightly fruity flavor.
