Lavender is one of those flavors I think you either understand or you absolutely do not. This iced honey lavender latte is creamy, lightly floral, and sweet without tasting like someone sprayed perfume into your cup. The homemade honey lavender syrup is what makes it, and once you have a jar in the fridge, making one of these takes almost no time.

If you like making coffee shop drinks at home, this one fits right in with my iced maple syrup latte and iced matcha latte. And if you want something sweet with it, my sourdough lemon blueberry scones are such a good pairing. I love having a few different drink options around depending on what I am in the mood for, and this is the one I reach for when I want something a little different but still easy.

Why you will love this Iced Honey Lavender Latte

  • ☕ A little caffeine boost. Who doesn’t need one? I have my coffee down to one cup in the morning, and then my life giving iced or hot latte somewhere between 11 and 2. It is genuinely one of the highlights of my day.
  • 🍯 Sweet, floral, and creamy. Honey and lavender are such a good combination. The honey keeps the lavender soft and mellow, while the milk makes the whole thing rich and smooth instead of overly floral.
  • 🌿 The syrup is worth making. Once you have a batch of honey lavender syrup in the fridge, you can use it in my iced matcha latte and it is used in my lavender vanilla cupcakes too. One batch, multiple excuses to keep making it.
  • 💰 Much cheaper than the coffee shop. For about the cost of a couple splurgy coffee shop drinks, you can make several at home. You also get to choose your beans, milk, sweetness, and whether you want regular or decaf without paying an extra fee every time you make a decision.

Key Ingredients

Ingredients for an iced honey lavender latte, including espresso, honey, culinary lavender, milk, heavy cream, and ice.

• Espresso: Use freshly brewed espresso for the best flavor. If you do not have an espresso machine, strong brewed coffee can work too.

• Milk: Whole milk gives you the creamiest latte, but use whatever milk you normally drink. Oat milk is especially good with lavender.

• Honey: This sweetens the lavender syrup and gives it a warmer flavor than regular sugar syrup.

• Dried culinary lavender: Make sure you are using culinary lavender that is intended for food, not decorative lavender.

How to Make an Iced Honey Lavender Latte Without an Espresso Machine

You do not need an espresso machine to make this. Use about ½ cup of very strong brewed coffee in place of the espresso. A French press, AeroPress, moka pot, or even strongly brewed drip coffee will work.

The main thing is to make the coffee stronger than you normally would because once you add ice, milk, and syrup, weak coffee disappears very quickly.

Expert Tips for the Best Honey Lavender Latte

• Do not over steep the lavender. Too long and it can start tasting medicinal or perfumey.
• Use strong coffee or espresso. The milk, ice, and syrup will mellow it out, so weak coffee gets lost fast.
• Start with less syrup. You can always add more, but lavender gets strong quickly.

What kind of lavender should I use?

Use dried culinary lavender that is labeled safe for cooking or baking. Decorative lavender is not the same thing.

How long does homemade honey lavender syrup last?

Store the cooled syrup in a sealed jar in the refrigerator. For best flavor, I would use it within about 1 to 2 weeks.

Can I make this latte hot instead of iced?

Absolutely. Skip the ice, warm your milk, and combine it with the espresso and honey lavender syrup. Froth the milk first if you want a coffee shop style finish.

Can I use a different milk?

Yes. Whole milk makes the creamiest latte, but oat milk, almond milk, or another milk of your choice will work. Oat milk is especially good with lavender because it stays creamy and slightly sweet.
