This no-bake protein bark has become a favorite in our home. They are so simple to throw together, they use great for you ingredients and best of all, kids love them. I use sugar free chocolate chips (we love Lily's!) unsweetened peanut butter from Costco, and I even found a dye-free M&M alternative, which keeps this mamas mind at ease while still feeling like a treat. This is a small recipe that I usually double, but one recipe makes approximately 8 pieces of bark if broken evenly, and for 8 pieces it packs 7 grams of protein per piece!

  1. In a mixing bowl, combine protein powder, oats, coconut oil, honey, and peanut butter. Stir until well blended.
  2. Press mixture onto a piece of parchment paper.
  3. In a microwave-safe bowl, melt chocolate chips with 1 tablespoon coconut oil. Stir until smooth.
  4. Pour melted chocolate over the pressed mixture and spread evenly.
  5. Sprinkle M&M’s on top.
  6. Chill in the fridge for at least 1 hour or until firm. Slice and enjoy.
