These cream cheese jalapeño poppers are so good because you get a little bit of everything in each bite. The jalapeños soften in the oven but still have enough texture to hold up to the rich, creamy filling, and the slight heat cuts through all that cheese perfectly. They’re warm, cheesy, a little spicy, and incredibly satisfying without being complicated to make. The combination is simple, but it’s exactly the kind of appetizer people keep reaching for.

If you’re putting together a bigger appetizer spread, serve them alongside my soft and chewy sourdough pretzels with warm nacho cheese or use my sourdough dinner rolls to make a tray of sliders. Both pair really well with the creamy, spicy flavor of these poppers and give you an easy mix of hearty and snackable options for parties, holidays, or game day.

Key Ingredients

Ingredients for cream cheese jalapeño poppers including jalapeños, bacon, cheddar cheese, cream cheese, ranch seasoning, and chives.

Jalapeños: Choose medium to large peppers that are fairly similar in size so they bake evenly. Remove the seeds and membranes for a milder popper, or leave a little behind if you like more heat.

Cream cheese: Let it soften first so the filling mixes together smoothly and stays rich and creamy as it bakes.

Cheddar cheese: Adds plenty of sharp, cheesy flavor and melts into the cream cheese filling. Freshly shredded cheddar will melt best.

Bacon: Cook and crumble it before adding it to the filling. It gives the poppers that salty, smoky flavor that works so well with the creamy cheese.

Tips for the Best Jalapeño Poppers

Wear gloves when prepping the jalapeños. The oils can linger on your hands and make touching your eyes later a deeply regrettable choice.

Remove the membranes for less heat. The more of the white membrane you remove, the milder your poppers will be.

Use softened cream cheese. It mixes much more evenly with the cheddar, bacon, and chives.

Choose similar sized jalapeños. They’ll bake more evenly and finish at about the same time.

Don’t overbake them. You want the peppers tender but still sturdy enough to hold the filling.

Serve them warm. They’re best when the filling is hot and creamy, but let them cool for a few minutes before serving.

Cream Cheese Jalapeño Poppers with Bacon FAQs

Can you make jalapeño poppers ahead of time?

Yes. Assemble the poppers, cover them, and refrigerate for up to 24 hours before baking. Bake them just before serving for the best texture.

How do you make jalapeño poppers less spicy?

Remove the seeds and the white membranes from inside the jalapeños. Much of the pepper’s heat is concentrated around that inner membrane, so cleaning the peppers well will give you a milder popper.

Can you freeze jalapeño poppers?

Yes. Jalapeño poppers can be frozen for later, although I’d freeze them before baking when possible and then thaw them in the refrigerator before cooking.

What cheese is best for jalapeño poppers?

Cream cheese makes the filling rich and creamy, while shredded cheddar adds more cheese flavor and melts into the filling as the poppers bake. Cream cheese and cheddar are a very common combination for baked jalapeño poppers.
