Equipment

  • 1 Small saucepan
  • 1 Jar

Ingredients

For the Chamomile Honey Syrup:

  • 1 cup water
  • 2 chamomile tea bags or 2 tablespoon dried chamomile flowers
  • ½ cup honey

For Each Mocktail:

  • 2 –3 tablespoon chamomile honey syrup
  • Ice cubes
  • ½ cup sparkling water plain or lemon works beautifully
  • Optional: squeeze of lemon juice
  • Garnishes: lemon wheel mint sprig, edible flower (like chamomile or pansy)

Instructions

How to Make the Chamomile Honey Syrup:

  • In a small saucepan, bring 1 cup of water to a boil.
  • Remove from heat and add the chamomile. Cover and let steep for 10–15 minutes.
  • Strain out the tea bags or flowers.
  • While the tea is still warm (not boiling), stir in the honey until dissolved.
  • Let cool to room temperature, then store in a jar or bottle in the fridge for up to 2 weeks.
  • This syrup is sweet, mellow, and floral—the perfect base for a relaxing drink. You can also drizzle it over pancakes, yogurt bowls, or even stir into warm milk before bed.

How to Build the chamomile tea mocktail:

  • Fill a glass with ice.
  • Add 2–3 tablespoons of chamomile honey syrup (less for subtle sweetness, more if you like it sweeter).
  • Top with sparkling water (about ½ cup).
  • Add a squeeze of lemon juice if you want some extra brightness.
  • Garnish with a lemon slice, mint, or edible flower. Sip slowly and savor.

Notes

Serving Ideas:

This Sparkling Chamomile Honey Mocktail is perfect for:
  • A peaceful afternoon treat during homeschool or naptime
  • A quiet evening when you just need a breather
  • Book club, Bible study, or backyard gatherings
  • Baby showers and brunches
It’s also lovely to serve as a non-alcoholic option at gatherings when others are sipping wine or cocktails—it holds its own in a pretty glass with a sprig of mint.
