Roasted Butternut Squash Cubes

These roasted butternut squash cubes are tossed with butter, maple syrup, and fresh thyme, then roasted until tender with golden caramelized edges. An easy fall side dish for weeknight dinners or holiday meals.

Ingredients
  

  • 1 medium butternut squash peeled and cut into 1 inch cubes
  • 2 tablespoons butter melted
  • 2 tablespoons maple syrup
  • 1 tablespoon fresh thyme plus more for garnish
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  • Peel the butternut squash, cut it in half lengthwise, scoop out the seeds, and cut the flesh into roughly 1 inch cubes.
  • Add the squash to a large bowl. Pour in the melted butter and maple syrup, then add the thyme, salt, and black pepper. Toss until evenly coated.
  • Spread the squash in a single layer on the prepared baking sheet, leaving a little space between the pieces.
  • Roast for 25 to 30 minutes, tossing once halfway through, until the squash is fork tender with golden caramelized edges.
  • Transfer to a serving dish and top with a little extra fresh thyme before serving.

Notes

• Cut the squash into similar sized pieces so it cooks evenly.
• Give the cubes some room on the baking sheet so they roast instead of steam.
• Pre cut butternut squash works perfectly if you want to save prep time.
• For deeper caramelization, let the squash roast undisturbed for the first half of the cooking time before tossing.
• Dried thyme can be used in place of fresh. Use about 1 teaspoon dried thyme.
