No Bake Chocolate Coconut Protein Bars

Soft and chewy chocolate coconut protein bars made with oats, peanut butter, honey, protein powder, and shredded coconut. They take about 10 minutes to mix and are finished with melted chocolate and flaky sea salt.

Ingredients
  

For the bars:

  • ½ cup natural peanut butter
  • 2 tablespoons coconut oil
  • ½ cup honey
  • 2 teaspoons vanilla extract
  • ½ cup plain or vanilla protein powder
  • 1 cup oats lightly blended
  • ¼ cup ground flaxseed
  • cup unsweetened shredded coconut

For the topping:

  • ¼ cup dark chocolate chips
  • 1 teaspoon coconut oil
  • Flaky sea salt for sprinkling

Instructions
 

  • Line a square baking dish or loaf pan with parchment paper.
  • Add the peanut butter, melted coconut oil, honey, and vanilla to a large mixing bowl. Stir until smooth and fully combined. Warm the peanut butter slightly first if it is especially thick.
  • Add the protein powder, blended oats, ground flaxseed, and shredded coconut. Stir until a thick, evenly combined mixture forms. Add a small splash of almond milk or warm water if the mixture feels too dry.
  • Transfer the mixture to the prepared pan. Press it down firmly into an even layer and smooth the top.
  • Add the chocolate chips and 1 teaspoon coconut oil to a microwave safe bowl. Microwave in 20 second intervals, stirring after each interval, until melted and smooth.
  • Drizzle or spread the melted chocolate over the bars. Finish with flaky sea salt.
  • Refrigerate or freeze for 30 minutes, or until firm.
  • Lift the mixture from the pan and cut it into 8 bars. Store refrigerated in an airtight container.

Notes

  • The texture can vary depending on the type of peanut butter and protein powder used. Add a little extra peanut butter or honey if the mixture is too dry.
  • Keep the bars refrigerated so they remain firm. Store them in the refrigerator for up to one week or freeze them for longer storage.
